Honey isn't only
a sweetness!
Someone thinks, that honey is only a delicacy, a tempting
sweetness. No! it's much more. Sure, honey is sweet, but its sugar can be
found in fruits and grapes, too. At different places in our digestive-system
they are simply and lightly digested. Honey isn't only sweet it's sour, too.
The organic acids in the honey improve hunger and digestion.
Honey is a varied food, which provides our body with many
essential substances. Honey fights against germs, supports digestion, the
liver, the drainage, feeds the muscles, has an calming effect and works as
a light laxative. For external use by wounds. Which other sweetener might
do this?
Important notice!
Honey becomes after a time - depending on the type - viscous and crystallises.
This depends on the ratio between glucose and fruit-sugar. If there is more
fruit-sugar, honey stays liquid for a long time. If there is more glucose,
honey becomes viscous and crystallises. But this doesn't influence its content.
If honey had been crystallised, you might worm it up by 40°C, it will become
runny, but a higher temperature will influence its quality.

of honey

Acacia-honey
Colour: nearly transparent, sometimes lightly yellow, rarely with a
green shine. Taste: agreeable, a light acacia-flower fragrance. Stays
runny for a long time. Soothing. Recommended to treat stomach troubles
caused by overproduction of gastric acid. Very recommended by cough
because of its disinfecting effects. Very recommended for young children
and old persons. Excellent to eat neatly or in beverages.

Flower-honey
This type of honey had been collected by keen bees from meadow-flowers
and medicinal plants, so it's one of the honeys with an excellent content.
Experts say, that it's one of the best honeys, because its sphere of
influence is enlarged by the nectar of various plants, used in nature
healing. The honey improves the protective systems of the body. Colour:
between lightly brown and dark-brown, depending on the mixture. Crystallises.
Neatly or for bakery.

Special types of
honey
You can find pure variety-honeys, collected by the bees of
plants, which are frequent at one place. The nectar of some plants is type-specific
and its effects are always others. If we know the content of the honey, we
might use it purposefully.

Silk-flower honey
A real Hungarian speciality. At the border of the forests in the sunny
regions between the Danube and the Theiss the heat of June and July
produces the nectar for the bees in the very good smelling flowers of
this wild-growing plant. Colour: transparent or lightly yellow. Fragrant
honey with a particular, strong flavour. Crystallises very slowly. This
honey improves the body with a high nutritional value, and a high trace
element and mineral salt content. Its most important quality: blood
pressure lowering. Consumption: 4-5 tea-spoons daily.

Forest honey
This type with its intoxicating fragrance had been collected by the
bees from the sweet nectar of the Hungarian forests. Colour: brown to
nearly black. High nutritional value. The vital trace elements and most
of the minerals are included in this honey, which might be digested
very fast by the body. It improves the immune system and raises the
powers of resistance. Compensates digestion. Excellent contents. Consumption:
4-5 tea-spoons daily.

Lime-blossom honey
The lime with its excellent fragrant flowers gives a lot of nectar for
the bees, with very good effects. Colour: light yellow to medium brown,
extremely strong fragrance. Calming effect. To use by colds or prevention

Amor honey
The most valuable plant for honey grows at the waterfront of the Theiss.
In June it attracts the bees with its tempting fragrance to collect
this gift of the nature. Colour: gleaming, lightly brown. Its biological
effect is excellent. This honey improves the powers of resistance of
the blood circulation , improves the heart and regulates its activity.
It improves the immune system of the body. Excellent neatly, for use
in meals and beverages.

Creme honey (
rape-honey)
In springtime the eye is pleased by the yellow sea of flowers of the
first culture-plant which gives nectar in big quantities. Pollen and
honey of rape provide the bees with the most nutritional value and so
they strengthen considerably fast. Colour: creme to light yellow, with
a creamy consistence. Very valuable honey, because it's packed immediately
after filtration and so all of its materials might be absorbed, without
having been undamaged, by the body. Fortifying, disinfecting and anti-inflammatory
effects. Special characteristics: crystallises very fast, sold as a
creamy honey, easy to spread.

Comb honey
A Hungarian speciality. Honey comb slices with acacia nectar from combs
the bees built in June in the wonderful acacia-forests of Hungary. Even
specialist consider it as a special feature. Contents the characteristics
of acacia honey.

Propolis honey
Its content is one of the most valuable honeys, because it had been
collected by the bees from valuable meadow flowers. The content of propolis
increases its pleasant effects. This honey might be used for external
use, too. Besides its fungus- and germ-killing quality it stops the
multiplying of virus, is painkilling and regenerating. If you eat this
honey, it will have anti-inflammatory effects, especially by infections
of the upper windpipe, the kidney pelvis or the mucous membrane of the
heart. This honey has also good effects by stomach disorder and gastric
influenza, it prevents the multiplication of the disease-causing agents
and kills them and its tannin content effects as an adstringens during
the removal of the diarrhoea.
The good effects of propolis by protecting the blood vessels , by draining
and by lowering blood-pressure are well-known. Might be used by troubles
of the menopause, stomach ulcer, colon ulcer or chronic bronchitis.
Propolis might not be used if patients have a malfunction of the thyroid
gland or allergic reactions of their skin. Consumption: 3-4 coffee-spoons
daily.

Honey-recipe
Honey-cookies for Christmas
Sift 1,1 kg flour into a dish; dissolve 360 g (2dl) honey in a syrup of 300g
sugar and 1 dl water. Mix with the flour with a wooden spoon and let it cool
down. Beat 250 g margarine and 5 egg yolks until frothy. Mix the hand-warm
flour with 1 coffee-spoon bicarbonate of soda, cinnamon and grind cloves,
if you like it, put some orange- or lemon skin in it, stir with the frothy
margarine and roll it out. Form rolls and let them rest covered. Roll out
the warm rolls in the thickness of a finger, cut out forms, put them on a
greased and floured baking tray, put on some egg yolk and let it bake until
lightly brown. Bakes fast!
